It’s never an easy thing, so I just want to say to anyone who’s ever lost someone close, I hope you’re doing ok. And before that my Aunt Katie (this is why my cousins are like siblings). My Mimi’s passing brought up some memories from when my Nonnie passed. I’ve said this before, but one of my biggest fears is losing someone close to me. That being said, death if of course, never an easy thing. This is comforting for me to think about. I know she really is in a better place and finally reunited with my Papa after too many years apart. This wasn’t a sudden a passing, so we’ve all been prepared. We’re heading back to Cleveland on Tuesday for the funeral. She was a tough, tough woman to say the least. She lived a pretty great, long life, as she was almost 89 years old, which is pretty incredible. There’s no easy way to transition into this, but in some more sobering news, my Mimi passed away this week. I’m so into the fall styles this year, all the cozy things…and boots! I’ve also been online shopping for some new fall clothes. Lots of fall and Halloween themed cooking. Tying up loose ends on something coming next year. Other than that, pretty basic week around here. A little later than last year, which is so nice! The weekends have been beautiful and our leaves are just at their peak. I know it will come in October, but thus far, September really has been perfect. I am really, really thankful we haven’t had any snow yet this season. It’s crazy because I love this time of year so much, but it’s always so busy and goes so fast. Next week October will hit, and man, things will really start to pick up then. ![]() Happy autumn…and happy last Sunday of September!! *Instructions for cooking this soup in a slow cooker or instant pot are on the Half-Baked Harvest blog. This post may contain affiliate links, please see our privacy policy for details. Serve the soup topped with additional Parmesan and fresh oregano, if desired. Simmer over medium heat for 20-30 minutes, until the carrots are tender.Ībout 10 minutes before serving, stir in the kale, cream, Parmesan, and the tortellini. Add the wine, broth, and a pinch of red pepper flakes. Cook another 5 minutes, until very fragrant. Add the carrots, celery, garlic, thyme, basil, oregano, fennel, paprika, and a pinch each of salt and pepper. When the oil shimmers, add the onion and cook 5 minutes, until golden. ![]() ![]() Heat the olive oil in a large pot over medium heat. It is very nice quality!Ģ tablespoons fresh thyme leaves (or 2 teaspoons dried)ġ-2 teaspoons fennel seeds, to your tasteġ/3 cup grated Parmesan cheese, plus more for serving I found this one at Aldi's for $14.99! If you want one, run and get one. I have wanted a pumpkin casserole dish like the one in the picture for ages, but I didn't want to pay high dollar for one. Add to that a cast of onions, carrots, celery, garlic, kale, tomato paste, broth, wine, a splash of cream, fresh herbs, tortellini, and Parmesan and you have one amazing soup! This is my FAVORITE Half-Baked Harvest recipe yet and will most likely be one of my favorite recipes of the year! If you're in need of comfort or warming up, you seriously need to make this! I had about 1/4 cup of herbs and spices! This is what cooking should be. I have not had to do this with any of Tieghan's recipes.įor example: Fresh thyme, 1 tablespoon of dried basil, 1 tablespoon of dried oregano, 1 teaspoon of fennel seeds, 1 teaspoon smoked paprika, red pepper flakes, salt, and pepper. This is rather unlike every other cookbook out there because a lot of chefs go light on seasonings, causing me to doctor up recipes myself. A creamy soup with cheesy tortellini that is loaded with veggies and still somewhat healthy? Yes, please! It just ticks all the boxes for me! One thing I've noticed about Tieghan's recipes is that she goes total ham with the spices and flavorings. I've been wanting to make Tieghan's Healthier Creamy Tortellini Vegetable Soup for ages. Maybe I've turned over a new leaf, but they are just the ones that look so dang good! For some reason, when I visit the Half-Baked Harvest site, I chose every single recipe designated as lighter and/or healthier. I usually have a tendency to chose indulgent and decadent recipes.
